We craft our pommeau with 100% fresh-pressed juice using a blend of dessert and heirloom apples aged in French oak barrels for 12 months. Taste Profile: Distinct baked apple, toasted graham cracker and almost butterscotch/brown sugar character, followed by tobacco and twine. It is quite sweet and is complemented by notes of over-ripe apples and fruit leather. It's completed with several layers of velvet and a boozy finish. Apple: A blend of dessert and heirloom apples: Fuji, Granny Smith, Honeycrisp, Gala, Red Delicious, Arkansas Black, Black twig, Ashmead's Kernel, Winter Banana, Jonathan, Wickson. Orchard: Sonoma County Distillation Date: September 2020 Aged: Neutral French Oak barrels for 12 months. The blended pommeau was then aged in Neutral French oak barrels for 3 months before bottling the final product. Gravenstein Apple Brandy
Each year we collaborate with local apple farmers to grow and harvest Gravenstein apples to craft our Save the Gravenstein single-varietal cider. As we continue our mission to save this beloved fruit, our Gravenstein Apple Brandy - made from the same fresh-pressed Gravenstein apple juice - allows us to highlight this heirloom apple varietal in a whole new light. Our Gravenstein apples are grown on Roberts Orchard and pressed at Apple A Day, right here in Sonoma County. It is then distilled at Alley 6 Craft Distillery just up the street from our cidery in Healdsburg.
