​​The drier climate of the Pajaro Valley in Santa Cruz County leads to the concentration of aromatics, lending intense, rich notes of melon, lemon and lime. On the palate the mouthfeel is full, yet crisp, likely due to the cool marine air that flows through the valley at night. Rich flavors of caramelized honey, peppercorns and brandy  from extended aging in barrel provide a warm finish to this bone dry cider.

Finish: Barrel Finish, Neutral French Oak

Jake Mann’s family legacy goes back to early days of apple growing and shipping in California. The ranches are located in the historic Corralitos area of the Pajaro Valley and include trees planted by his great grandfather that are still producing fruit today. The ranch is located five miles north of the city of Watsonville, thus given the name, “Five Mile Orchards”. 17 varieties of apples are grown on the orchard, including many of Newtown Pippin.

Orchard location: Pajaro Valley, CA
Orchard size: 75 acres across 6 ranches
Climate: Mediterranean. Summer fog. 

Soil type: Loam 
Age of oldest trees: 115 years on the upper end. A lot of 75-80 year old standard rootstock trees. 
Irrigation: once or twice annually in July, deep watering with sprinkler pipe.
Harvest dates: Newtown Pippins are picked from the Autumnal equinox to mid October
Ripeness levels start harvest: 12-16 bricks
Fruit condition: blemish-free, sound fruit. Managing for apple scab, codling moth, and a host of other ailments common to large orchards. The fruit has to be top quality to store well into the winter months.
Press technique: family-run facility nearby using a very large (3500 gallon capacity) bladder press.
